Quinoa Rainbow Bowl
Quinoa, this wonderful ancient seed, highly nutritious, try using it instead of rice.
Put 1 cup of quinoa in a pot with 2 cups of water and a pinch of salt. To save time I add boiling water. Let it simmer for ca.15 minutes or until the water is soaked up.
Heat up 2 tablespoon of virgin coconut oil in a pan, add
- 2 crushed garlic cloves
- 2 cm piece ginger ( grated), *1/2 diced onion
- 1 tsp turmeric powder
- 1 tsp sweet paprika powder
Stir for 2 minutes and add diced vegetables ( it can be anything you like):
Zucchini, peppers, broccoli, cauliflower, mushrooms, Brussel sprouts, tomatoes, asparagus…
Stir for another 10 minutes and season with sea salt, pepper and chili flakes.
Mix cooked quinoa with the cooked vegetables, adjust seasoning and top it with herbs like cilantro, parsley or basil leaves! In this one I added grated raw carrots for an extra boost.
